I think these were shot using what's called a tilt-shift lens. Mainly used in wide angle architectural photography/videography, these have movable front parts that can straighten lines, but can also be used to produce effects like these (with a few focusing adjustments, i think). I don't know how the pros exactly do this technique, but this is called "miniature effect." Hope that helps. Cheers! :)
